We love eating pastry but these homemade sausage rolls are a family favorite. I can never make enough of it for the family. Nothing excites them more than the smell of freshly baked chicken sausage rolls.
They love it so much that we sometimes eat it for dinner served with hot chocolate or cold juice depending on the weather. If it's hot, cold drink to the rescue, and if it's cold it's hot chocolate or coffee.
I mostly make it with shortcrust pastry but you can also use puff pastry. I'd like for you to try my shortcrust pastry for sausage rolls. It takes 5 minutes to put together, it's buttery and crumbly and you'll love it.

This chicken sausage rolls recipe is made from scratch. It's easy, simple, and quick. The pastry is buttery and crumbly, the sausage meat juicy, and delicious. It's so good and every mouthful is a pleasure.
Using chicken for sausage rolls is good as chicken sausages are healthier than pork sausages and leaner than beef. They also remain moist during baking, unlike the others.
For this recipe, you can make big-sized or mini. This recipe makes 12 sausage rolls or 24 mini sausage rolls.

Chicken Seasoning - Here's our chicken seasoning recipe that you can make in 5 minutes. You can also use any other seasoning of your choice.
Flour
Butter
Egg - To seal the edges, and to eggwash the top for a golden look and added to the pastry. You need just 1 egg to do all of this.
Salt
Nutmeg (Optional) - This is optional but I like to add just a pinch in the shortcrust pastry.
Shortcrust pastry for sausage rolls
Let me show you how to make shortcrust pastry for sausage rolls. It takes less than 5 minutes to put it together. Here's how:
In a bowl, add the flour, nutmeg, and salt. Mix well. Add in the butter and using your hands, mix the butter in till you get a crumb-like texture.
Add in the egg yolk and water then mix till the pastry comes together. (Save the eggwhite to eggwash the rolls)
Wrap it in a cling film and put in the fridge to chill for 30 minutes.
It's ready to use.
How to make Chicken sausage rolls
Make the sausage filling - Remove the sausages from their casing, add into a bowl, add in black pepper, chicken seasoning, and mix together till combined.
Some sausages are preseasoned so be careful not to oversalt.
Roll the pastry - place the puff or shortcrust pastry on a clean worktop, roll it out and cut into a long roll rectangular shape.
Place the filling in a straight line on the pastry. Lightly brush one of the edges with the egg white or water, then seal shut. Use a fork to crimp the edges as shown below then cut into size. Repeat till pastry and filling used up.
Place on a baking paper/parchment paper lined baking tray. If making long rolls, make four small cuts on the top of the pastry, then brush with egg.
Bake - Bake the rolls in a preheated oven temperature of 400F/ 200C for 20-25 minutes or till done.
What to serve it with
It can be served at parties as appetizers, at tea time and it can be served with :
Drinks like lime juice, lemon juice, Iced coffe, Iced tea.
Dips - like ketchup, or hp sauce.
How to Store
Can I freeze sausage rolls? Yes, you can freeze pre-baked or after baking. If storing before you bake, don't brush with egg.
Leftovers can be stored in the fridge or in the freezer depending on how long you want to keep them stored. If you only need to preserve them for a couple of days, store them in the fridge where they will last for 3 days.
If you'd like to store them longer, store them in the freezer where they'll last up to 3 months.
Reheat in the oven or air fryer.
To reheat in the oven, put on a parchment paper-lined tray and bake at a temperature of 200C for 4minutes or until it's warmed through.
Tips
- You can make them big size or mini sausage rolls. Mini are more suitable for appetizers.
- Use beef or pork sausages in place of the chicken sausages if that's what you prefer.
- You can substitute the black pepper for cayenne pepper.
- Adjust the pepper quantity to suit your taste.
- Add seasoning of your choice.
- The internal temperature of sausages when cooked should be160F/63C.
- It can be served hot or cold.
