Ingredients you'll need
For this simple chicken seasoning, you'll need these 8 ingredients. The quantity listed in the recipe card at the bottom of this post makes 8 tablespoons which will season up to 4kg/8lb of chicken.

Black pepper - You can substitute with chili pepper flakes, chili pepper, or cayenne pepper.

How to Make Simple Chicken Seasoning
Dry a small bowl and spoon. Add all the ingredients into the bowl and mix till well combined.
Pour the mix into a dry mill and blend (This is not necessary but it makes the mix well combined and gives a smoother texture).
It's ready to use and store.
How to Use it and How much to Use

For chicken, use 2 tablespoons of this blend per 1kg chicken. Remember to salt the chicken as desired as this is a no salt chicken seasoning mix.
How to store and how long does it last
It will last up to a year depending on the expiry date of the herbs used, as a general rule, use the nearest expiry date of the ingredients. For example, if the parsley used has the earliest expiry date and expires in 6 months, and Oregano has the longest expiry date and expires in 12 months, your spice mix expiry date will be 6 months.
To store, pour in a spice container or an airtight container, label with dates, and store in a cool dry place away from direct sunlight.
As it's so easy to put together, I recommend you mix in small batches to keep it fresh.
Pro Tips
- Dry the tools before use because this is a dry rub and you want to keep it dry so as to safely store it for use. If it is wet, it might get mouldy and unsafe to use.
- Adjust pepper to taste. If you like it hotter, add more pepper and if you find the quantity of the pepper overwhelming, reduce it.
- You can substitute the black pepper for cayenne pepper or chilli pepper flakes.
- It's perfect as it is but if there are any other herbs you like in your seasoning you can add your favorite herb or spice into the mix.
How do you make the seasoning stick to chicken?
Adding a little bit of oil to the chicken will ensure the seasoning sticks to the chicken. I like to use olive oil most of the time but you can also use vegetable or sunflower oil.
