Spicy Chicken Drumsticks Recipe
These spicy chicken drumsticks are so good you'll be making it over and over again. Spicy, flavorful, tender inside, juicy, crispy skin, and tasty.
What's not to love about these spicy baked chicken drumsticks that are well marinated and baked in the oven to perfection?
It's not too spicy that the kids don't eat in fact you can adjust the pepper to how hot you want it.
You can use your favorite pepper, substitute, or use a combination of peppers. The choice is yours and that's why this is versatile as you can customize it to your taste.
You can remove the skin if you want to reduce the calories but I personally love it with skin on as it gives it more flavor.
It requires minimal prep and clean up is easy.
Simple, straightforward, trusted recipe that makes use of few kitchen cupboard ingredients.
No sugar, no unnecessary additives, no artificial ingredients, or preservatives used in making these spicy chicken legs.

Ingredients

Chicken drumsticks - Also reffered to as chicken legs. Bone in skin on or skinless.
Ginger
Paprika
Cayenne pepper
Sriracha (Optional)
Garlic powder or granules
Olive oil - I like to use this as it helps with the seasoning sticking to the chicken evenly and also it lets the chicken bake beautifully in the oven with a glossy look. You can also use vegetable oil, sunflower oil, or not use if that's what you prefer.
Salt - To taste.
How to make spicy chicken drumsticks
Prepare the chicken - Wash and pat dry. If you don't wash your chicken just pat dry with a paper towel and add in a bowl.
Season- add the ginger, paprika, cayenne pepper, garlic powder, sriracha, olive oil, and salt to the chicken. Mix well till combined.
If you have the time, cover the bowl with clingfilm, put it in the fridge to marinate for an hour. If not continue to the next step below.
Bake - Arrange the marinated drumsticks in a single layer on a baking paper-lined tray and put the tray on the middle shelf of the oven.
Set the oven temperature to 200C/400F and bake the chicken for 35-40 minutes or till done.
It's ok if you don't have baking paper. It just makes cleaning the baking tray easier.
Serve - Bring out of the oven, leave to rest for 5 minutes then serve.
You can use the drippings in the pan to make gravy.

How to Store
Leftovers keep well in the fridge. Let it cool completely, then put it in a Ziploc bag, and store it in the fridge for up to 4 days. You can also store it in the freezer where it will last for up to 6 months.
Reheat in the microwave, oven, or air fryer.
To reheat in the microwave: Arrange the chicken on a microwave-safe plate, cover, and set at a high temperature setting to cook for 2 minutes. Add additional time if not warmed through after this time.
To reheat in the oven: Place them on a baking paper-lined tray and bake in the oven at a temperature of 180C/380F for 4 minutes or till warmed through.
Tips
- Don't forget to immediately clean all tools used to cut or clean the raw chicken.
- Pat chicken dry with a paper towel before adding the marinade.
- Let it marinate for at least 30 minutes if you have the time.
- Line the baking tray with baking paper for easy clean up of the tray after cooking.
- Arrange chicken in a single layer so they bake evenly.
- Substitute cayenne pepper for black pepper, chili, crushed pepper flakes, or sriracha sauce. Also, you can adjust the quantity of pepper to how hot you like it.
- You can make this spicy chicken drumsticks in the air fryer.
