Ingredients you will need to make it
Chicken breast - You can substitute with boneless chicken thighs. They have similar cooking time and either boneless chicken breast or thighs can be used for this recipe.
Oil - Vegetable, sunflower or olive oil works fine. You need just a little of this.
Onion - I like using brown onion for this bit you can use any type from red onion, yellow onion, and others.
Garlic - fresh chopped or minced garlic works great.
Chopped tomatoes - Canned chopped tomatoes or substitute with plum tomatoes.
Black pepper - Substitute with cayenne pepper or any pepper of choice.
Parsley
Basil
Thyme
Stock cubes
Salt
Chicken broth or wine.
How To Cook Chicken Breast In Tomato Sauce
Prep the chicken by patting them dry and seasoning with salt, pepper, and any other seasoning you wish to add.
Add oil to a frying pan or skillet over medium heat then add the seasoned chicken breasts.
Leave to brown and cook for 7- 8 minutes then flip them over to brown and cook the other side for another 7-8 minutes.
Remove the chicken from the skillet onto a plate and set aside.
Add chopped onions and garlic in the skillet, then saute for a minute or two till translucent and fragrant.
Add in the chopped tomatoes, pepper, basil, parsley, thyme, stock cubes, and salt. Stir and cook for 5 minutes.
Add the chicken broth, stir then add the chicken breasts back into the skillet.
Cook on low heat for 10 minutes then take off heat.
Serve and enjoy.

How To Store
Leave to cool completely, put in an airtight container, label and store in the fridge where it will last for up to 4 days or store in the freezer where it will last for up to 6 months.
It can be reheated in the microwave or on the stovetop.
To reheat in the microwave, put in a microwave safe bowl, cover and heat on high temperature settingsfor 2 - 3 minutes or till heated through.
To reheat on the stove, pour in a skillet or pan, add some water and cook on medium heat for 5 minutes or till heated through.

- To test if the chicken is cooked to a standard that is safe to eat, insert an instant read thermometer into the thickest part to check the temperature. The temperature should at least be 165F / 75C to be considered safe to consume.

- Season chicken with salt and chicken seasoning or any other seasoning of your choice.
- You can cut the chicken breasts into smaller pieces after pan-frying.
