    Easy air fryer chicken and vegetables recipe that is simple and fast. This healthy air fryer roasted vegetables and chicken is marinated in seasoning and air fried to perfection. It is quick and is ready in under 30 minutes.

    Air Fryer Chicken and Vegetables Recipe

    This air fryer chicken and vegetables recipe requires minimal preparation, it's simple and straightforward.

    This is a delicious healthy meal that is low carb, keto, low calorie, and healthy.

    Chicken and vegetables are roasted in the air fryer at the same time saving time and creating a quick dinner.

    It is inexpensive, makes use of few ingredients and you get a satisfying low-carb chicken dinner.

    Can you cook vegetables and chicken in the air fryer at the same time?

    Yes, you can and i will show you how to do that in this post. It is easy and takes just about 20 minutes to cook both at the same time in the air fryer.

    Can you put raw chicken in an air fryer?

    Yes, air frying chicken is one of the easiest and healthiest way of cooking chicken.

    This recipe was made in my 5.5 litres air fryer which is big enough to make 4 servings of this dish. If you own a smaller air fryer, you can half this recipe. I believe you will love this healthy air fryer recipe.

    Air Fryer Vegetables

    With Air fryer vegetables, any type of vegetables including Mediterranean vegetables, tender vegetables, and root vegetables are roasted in the air fryer to create tender, and crispy roasted vegetables.

    It is easy, quick and simple to roast vegetables in air fryer. It takes less than 30 minutes.

    This air fryer vegetables and chicken recipe requires minimal prep and cleaning up the air fryer basket is easy.

    Vegetables that can be roasted in air fryer include:

    Broccoli

    Carrots

    Peppers

    Onions

    Zucchini

    Asparagus

    Mangetout

    Cauliflower

    Potatoes

    Eggplant

    Kale

    Brussel sprouts

    Parnsnips

    Tomatoes

    Mushrooms

    Seasoning you can use to roast veggies include:

    Peri peri seasoning

    Chicken seasoning

    Italian seasoning

    Spices and herbs like parsley, coriander, thyme, basil, garlic, all go well with vegetables.

    Ingredients

    Chicken breast or boneless chicken thighs

    Broccoli

    Red bell pepper

    Yellow bell pepper

    Red Onion

    Paprika

    Parsley

    Black pepper

    Salt

    Olive oil

    How to Make Chicken and Vegetables in the Air Fryer

    Pat the chicken dry with a paper towel then cut into bite size that is about an inch.

    Season the chicken with salt, pepper, parsley and any other seasoning of your choice. Mix and set aside.

    Wash the vegetables and cut them into similar bite size.

    Add the remaining black pepper, parsley, salt, olive oil and any other seasoning to it. Mix to combine with the veggies.

    Add the chicken and vegetables in the air fryer basket in a single layer.

    Set the air fryer to a temperature of 175C/ 350F.

    Air fry the vegetables and chicken for 15 minutes or till cooked.

    Bring out of the air fryer, serve and enjoy.

    What To Serve With

    This is a healthy main meal in it's own right however you can add a side dish if you like. Some side dishes you can serve with are:

    Boiled Rice

    Couscous

    Quinoa

    Mashed Potatoes

    Air fryer potatoes

    How To Store Air Fryer Vegetables and Chicken

    Leftovers stores well and can be repurposed. To store, leave to cool completely then pack in a sealed container.

    Store in the fridge: If you store in the fridge, it will last for up to 3 days.

    To store in the freezer: Put in a freezer safe container, label and date then store in the freezer where it will last for up to 3 months.

    Reheat in the air fryer, oven or microwave.

    How To Use Leftover - Use in sandwiches, salads, soups, stews, wraps, omelettes.

    Tips

    • Cut chicken into bite size so it cooks at the same time as the vegetables. If using bigger portions, cook the chicken in the air fryer for 5 minutes before adding vegetables to it.
    • If using any other vegetable not listed in the recipe, ensure it has a similar cooking time with the one listed so they cook evenly.
    • Season to your taste and liking. You can use any seasoning of choice.
    • Arrange the chicken and veggies on a single layer in the air fryer basket.
    • Note that cooking time varies with the brand of air fryer so you might have to adjust the temperature and cooking time.

    Ingredients
      

    • 500 g (1lb) Chicken breast or boneless chicken thighs
    • 1 small head Broccoli
    • 1 small Red bell pepper
    • 1 small Yellow bell pepper
    • 1 small Red Onion
    • 1 tablespoon Paprika
    • 1 tablespoon Parsley
    • 1 teaspoon Black pepper
    • Salt to taste
    • 1 tablespoon Olive oil
    • ½ teaspoon Garlic granules

    Instructions
