This air fryer chicken and vegetables recipe requires minimal preparation, it's simple and straightforward.
This is a delicious healthy meal that is low carb, keto, low calorie, and healthy.
Chicken and vegetables are roasted in the air fryer at the same time saving time and creating a quick dinner.
It is inexpensive, makes use of few ingredients and you get a satisfying low-carb chicken dinner.
Can you cook vegetables and chicken in the air fryer at the same time?
Yes, you can and i will show you how to do that in this post. It is easy and takes just about 20 minutes to cook both at the same time in the air fryer.

This recipe was made in my 5.5 litres air fryer which is big enough to make 4 servings of this dish. If you own a smaller air fryer, you can half this recipe. I believe you will love this healthy air fryer recipe.

Spices and herbs like parsley, coriander, thyme, basil, garlic, all go well with vegetables.

Chicken breast or boneless chicken thighs
Broccoli
Red bell pepper
Yellow bell pepper
Red Onion
Paprika
Parsley
Black pepper
Salt

How to Make Chicken and Vegetables in the Air Fryer
Pat the chicken dry with a paper towel then cut into bite size that is about an inch.
Season the chicken with salt, pepper, parsley and any other seasoning of your choice. Mix and set aside.
Wash the vegetables and cut them into similar bite size.
Add the remaining black pepper, parsley, salt, olive oil and any other seasoning to it. Mix to combine with the veggies.
Add the chicken and vegetables in the air fryer basket in a single layer.
Set the air fryer to a temperature of 175C/ 350F.
Air fry the vegetables and chicken for 15 minutes or till cooked.
Bring out of the air fryer, serve and enjoy.
Tips
- Cut chicken into bite size so it cooks at the same time as the vegetables. If using bigger portions, cook the chicken in the air fryer for 5 minutes before adding vegetables to it.
- If using any other vegetable not listed in the recipe, ensure it has a similar cooking time to the one listed so it cooks evenly.
- Season to your taste and liking. You can use any seasoning of your choice.
- Arrange the chicken and veggies on a single layer in the air fryer basket.
- Note that cooking time varies with the brand of air fryer so you might have to adjust the temperature and cooking time.

- 1 small head Broccoli
- 1 small Red bell pepper
- 1 small Yellow bell pepper
- 1 small Red Onion
- 1 tablespoon Paprika
- 1 tablespoon Parsley
- 1 teaspoon Black pepper
- Salt to taste
- 1 tablespoon Olive oil
- ½ teaspoon Garlic granules
