Ingredients
  

  • 1 kg (2lb) Boneless Chicken breast or boneless chicken thighs
  • 1 teaspoon Parsley
  • ½ teaspoon Dried thyme
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • ½ teaspoon Onion granules
  • ¼ teaspoon Black pepper
  • Salt to taste
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice

Instructions
 

  • Soak the skewers in water for 30 minutes to an hour. If using metal skewers, no need to soak them.
  • In a small bowl, add the paprika, parsley, black pepper, dried thyme, garlic powder, lemon juice, olive oil, and onion granules. Mix till well combined.
  • Pat the chicken dry and cut into bite size cubes.
    Wash and cut the pepper and onion into cubes. Let the size of the chicken pieces be chunkier than the peppers and onion.
  • Add the chicken, pepper, onion, and marinade in a bowl. Mix till all well combined.
  • Thread the seasoned chicken, onions, and peppers on skewers alternating them. Don't overfill the skewers.
  • Place a griddle pan on medium heat. Brush with oil.
    Place the skewers on the griddle and cook for 6-8 minutes, turning the sides at 2-3 minutes intervals until cooked through and the chicken is no longer pink in the middle.
  • Take the pan off the heat and serve chicken kebabs.

To Cook It In The Oven

  • Preheat the oven to 200C/400F.Place the chicken skewers on a wire rack on top of a foil-lined baking tray.
  • Bake chicken skewers on each side for 10 minutes. Total 20 minutes.

Notes

  • Cut the chicken pieces into even bite-size so they cook evenly.
  • You can use any good marinade to marinate the chicken.
  • Don't overcrowd the skewers. Leave enough space to hold and also between each threading.
  • If using wooden skewers, soak them in cold water for 30 minutes to an hour before using them. This will prevent them from burning during cooking.
  • If using metal skewers, reduce the cooking time by a minute or two as the metal heats up, retains heat, and cooks the chicken from the inside.
  • Metal skewers will be hot so handle with care and don't burn yourself.
Depending on the oven, how long to cook chicken skewers in the oven is about 20 minutes at a temperature of 400F/200C.
