Chicken bites recipe that's easy, and simple to make. These chicken chunks are juicy, tender, succulent, and packed full of flavor. It's quick to cook and makes a perfect appetizer, or side dish that can be served with pasta, rice, potatoes, or used in wraps and salads. Let me show you how to make diced chicken bites in the oven, or stovetop.
1kg (2lb)Boneless Chicken breast or chicken thighs
½tablespoonPaprika
1teaspoonParsley
½teaspoonDried thyme
1teaspoonGarlic powder
½teaspoonOnion granules
½teaspoonBlack pepperor to taste

2tablespoonsOilolive, vegetable, or sunflower oil
2tablespoonsGarlic butter or any sauce of choiceOptional
Instructions
Clean the chicken, and pat them dry with paper towels.Cut the chicken breast into cubed bite size.
Add the chicken cubes into a bowl, then add the paprika, thyme, parsley, garlic powder, onion granules, black pepper, and lemon juice. Mix till all well combined.
Cover the bowl with clingfilm, put it in the fridge, and let the chicken marinate for 30 minutes to 2 hours. Bring out the marinated chicken bites.
Place a skillet on the stove on medium heat.Add in vegetable oil. When heated, add in the chicken cubes.
Cook for 2 minutes, turn the chicken pieces to the other side and cook for another 2 minutes, turning the sides at intervals until all sides are cooked, the outer is crispy, and the inside tender. Cooking time total of 6-8 minutes.
When cooked, add in the garlic butter, or any sauce of your choice (if using), stir with the diced chicken for a minute.
Take the skillet off the stove top, and serve chicken bites.
Notes
Boneless chicken thighs are more flavorful than chicken breast.
Pat the chicken dry before cutting and seasoning.
Cut the chicken breast into even bite-size so they cook evenly.
Season generously.
Adjust pepper and salt to suit your taste.
Don't overcrowd the baking tray or skillet. Leave room so the chicken cooks evenly.
After cooking, you can add the sauce of your choice to the chicken such as garlic butter sauce, lemon pepper sauce, buffalo sauce, etc.
Don't overcook the chicken so they don't dry out.
