Ingredients
  

  • 1 kg (2lb) Chicken drumsticks
  • ½ tablespoon Paprika
  • 1 teaspoon Parsley
  • ½ teaspoon Dried Thyme
  • ¼ teaspoon Garlic powder
  • ¼ teaspoon Onion powder
  • ¼ teaspoon Black pepper
  • 1 tablespoon Oil vegetable, olive or sunflower oil.
  • Salt to taste

Instructions
 

  • Prepare the chicken - Pat the chicken drumsticks dry with a kitchen towel.
  • Make the chicken drumsticks spice rub - In a small bowl, add the paprika, thyme, onion powder, garlic powder, parsley, pepper, and salt. Mix well till combined.
  • Add the drumsticks and the rub into a bowl and mix till the drumsticks are covered in the seasoning.
  • Arrange the seasoned chicken legs on a baking tray making sure the tray is not overcrowded.
  • Bake the drumsticks - Put the tray in the oven and bake drumsticks at a temperature of 190C/375F for 20 minutes, flip the drumsticks and bake the other side for another 15-20 minutes then increase the temperature to 200C/400F and bake for additional 5 minutes for crispy skin.
  • Bring the tray out, leave the chicken to rest for 3-5 minutes.
  • Serve and enjoy.

Notes

  • Season and refrigerate for an hour or more to infuse the seasoning in the chicken.
  • The pepper quantity stated in this recipe is a guide only. Adjust according to your state. If it's not spicy enough to your taste, add more. 
  • It's not necessary but lining the baking tray with parchment paper will make cleaning the tray easier. 
  • Other substitutions for black pepper are cayenne pepper and crushed pepper flakes.
  • For extra crispy skin, increase the oven temperature in the last 5 minutes as stated in the recipe. 
  • You can use the pan juice to make gravy.
