Choose the cut you want to mince, rinse and pat dry.
Using a sharp knife or kitchen scissors, cut the chicken into 1-2 inch cubes.Arrange the cut chicken on a plate or tray and put it in the freezer to chill for 20 minutes.
Bring out the chicken when it's firm but not frozen, then put some of it in the food processor. Process for 1-2 minutes or till chicken is grounded or minced to your desired texture.
Transfer the mince into a clean bowl or grease proof paper.Repeat above steps till all chicken used up.
Use it immediately or store it in the freezer till ready to use.
