Ingredients
  

  • 2 Boneless chicken breast
  • 2 tablespoons Olive oil
  • 1 medium  Onion chopped
  • 4 cloves Garlic minced
  • 1 can Chopped tomatoes
  • ¼ teaspoon Parsley
  • ¼ teaspoon Basil
  • ½ teaspoon Dried thyme
  • Salt  to taste
  • 1 cup chicken broth

Instructions
 

  • Pat chicken breast dry and season with salt, pepper, and any other seasoning you wish to add. 
  • Add oil to a frying pan or skillet over medium heat then add the seasoned chicken breasts.
  • Leave to brown and cook for 7- 8 minutes then flip them over to brown and cook the other side for another 7-8 minutes.
  • Remove the chicken from the skillet onto a plate and set aside.
    Add chopped onions and garlic in the skillet, then saute for a minute or two till translucent and fragrant.
  • Add in the chopped tomatoes, pepper, basil, parsley, thyme, stock cubes, and salt.
    Stir and cook for 5 minutes.
  • Add the chicken broth, stir then add the chicken breasts back into the skillet.
  • Cook on low heat for 10 minutes then take off heat.
    Serve and enjoy.
