Equipment

Ingredients
  

  • 500 g (1lb) Chicken breast or Boneless chicken thighs
  • 1 medium Bell pepper
  • 1 Red onion you can use brown, or yellow onion.
  • 1 Zuchinni/ Courgette Optional
  • ½ tablespoon Paprika
  • ¼ teaspoon Oregano
  • 1 teaspoon Parsley
  • ½ teaspoon Garlic powder
  • ½ teaspoon Onion granules
  • ½ teaspoon Black pepper
  • Salt to taste
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil

Instructions
 

  • Soak the bamboo skewers in water for 30 minutes to an hour. If using metal skewers, no need to soak them.
  • In a small bowl, add the paprika, oregano, parsley, garlic powder, onion granules, black pepper, salt, olive oil, and lemon juice. Mix till well combined.
  • Pat the chicken breast dry and cut into 1 inch bite size cubes.
  • Cut the bell pepper, and onions into cubes.
    Slice the courgette /Zucchini into ¼ inch thick slices.
  • Add the diced chicken, bell pepper, onions, courgette, and marinade into a bowl. Mix till they are all well combined.
    Cover the bowl with clingfilm, put it in the fridge, and let it marinate for 30 minutes up to 4 hours.
  • Thread the chicken, zucchini, bell pepper, and onions on the skewer alternating them.
  • Arrange the chicken skewers in air fryer basket in a single layer.
    Air fry chicken kabobs at 400F/200C for 12-15 minutes turning them halfway into the cooking.
  • Bring out the chicken kebabs, and serve.

Notes

  • If using wooden skewers, soak for at least 30 minutes to prevent them from burning in the air fryer.
  • Cut the skewers and make sure they fit in the air fryer before threading them with the chicken and veggies.
  • The chicken breast or thigh should be cut into equal bite-size so they cook evenly in the air fryer.
  • You can season chicken with any of your favorite seasoning or chicken marinade.
  • If you have the time, allow the chicken to marinate for at least 30 minutes before cooking.
  • Don't overcrowd the skewer. Leave enough space to hold and also between each threading.
  • Don't overcrowd the air fryer. If the skewers don't fit in at a go, you can cook them in batches.
  • If using metal skewers, reduce the cooking time by a couple of minutes as the metal heats up quickly, retains heat, and cooks the chicken from the inside.
  • Metal skewers will be hot so be careful in the handling so you don't burn your hand when picking them up.
