This Christmas chicken recipe will detail how to roast a chicken in quick and easy steps with an end result that leaves the chicken with golden-brown crispy skin and the inside juicy and tender whilst still having sumptuous aromatic and herby flavor.

Ingredients
  

  • 1 2kg (4lb) Whole Chicken
  • 1 teaspoon Paprika
  • ½ tablespoon Parsley
  • 1 teaspoon Oregano
  • 1 teaspoon Rosemary
  • 1 teaspoon Thyme
  • ½ teaspoon Tarragon Optional
  • 1 teaspoon Garlic powder
  • ½ teaspoon Black pepper
  • Salt to taste
  • 6 tablespoons Butter
  • 2 Onion
  • 2 Oranges
  • 2 large Carrots

Instructions
 

  • Start by dabbing the entire chicken with a kitchen towel to dry it. Remove any giblets in the chicken cavity if any. 
  • Put oregano, parsley, thyme, black pepper, salt, paprika, butter, and garlic powder into a small bowl. Mix until it is a fine paste. This will be your chicken marinade. 
  • Spread the marinade all over the chicken. Apply it inside as well.
  • Cut the Orange and onion into 4 parts then put the cut onion and orange pieces in the chicken cavity.
    Place the chicken in the fridge for 1 to 12 hours to marinate.
  • Next, line the baking tray with sliced oranges, carrots, and onions.
    Bring out the marinated whole chicken and place it on the vegetables in the baking tray. 
  • Place the tray in the oven and allow to bake at a temperature of 200C/400F for 1 hour 20 minutes.
  • When cooked, take out the cooked chicken and let it cool for about 15 minutes before carving and serving it.

Notes

  • You can add pepper quantity according to your preference. 
  • Replace garlic powder with garlic granules. 
  • You can line the baking pan with some other vegetables like shallots and celery.
  • Double-check to ensure that the chicken is well cooked before taking out of the oven. 
  • Allow the roasted chicken to cool for 15 minutes before you serve. 
  •  The chicken is cooked when the internal temperature at the thickest part is at least 165F/75C. Remember that It is unsafe to eat if the temperature is below this.
