This is a Christmas roast chicken that is so delicious and full of flavor, yet so easy and simple to cook. This Christmas chicken recipe will detail how to roast a chicken in quick and easy steps with an end result that leaves the chicken with golden-brown crispy skin and the inside juicy and tender whilst still having sumptuous aromatic and herby flavor.
Start by dabbing the entire chicken with a kitchen towel to dry it. Remove any giblets in the chicken cavity if any.
Put oregano, parsley, thyme, black pepper, salt, paprika, butter, and garlic powder into a small bowl. Mix until it is a fine paste. This will be your chicken marinade.
Spread the marinade all over the chicken. Apply it inside as well.
Cut the Orange and onion into 4 parts then put the cut onion and orange pieces in the chicken cavity.Place the chicken in the fridge for 1 to 12 hours to marinate.
Next, line the baking tray with sliced oranges, carrots, and onions.Bring out the marinated whole chicken and place it on the vegetables in the baking tray.
Place the tray in the oven and allow to bake at a temperature of 200C/400F for 1 hour 20 minutes.
When cooked, take out the cooked chicken and let it cool for about 15 minutes before carving and serving it.
Notes
You can add pepper quantity according to your preference.
Replace garlic powder with garlic granules.
You can line the baking pan with some other vegetables like shallots and celery.
Double-check to ensure that the chicken is well cooked before taking out of the oven.
Allow the roasted chicken to cool for 15 minutes before you serve.
The chicken is cooked when the internal temperature at the thickest part is at least 165F/75C. Remember that It is unsafe to eat if the temperature is below this.
