This chicken breast in tomato sauce recipe is simple, easy, and quick. Pan-fried chicken is simmered in tomato, herbs and spices to give flavorful, aromatic, and delicious chicken tomato sauce that can be served on pasta, noodles, rice, or potatoes.
Prep the chicken by patting them dry and seasoning with salt, pepper, and any other seasoning you wish to add.
Add oil to a frying pan or skillet over medium heat then add the seasoned chicken breasts.Leave to brown and cook for 7- 8 minutes then flip them over to brown and cook the other side for another 7-8 minutes.Remove the chicken from the skillet onto a plate and set aside.
Add chopped onions and garlic in the skillet, then saute for a minute or two till translucent and fragrant.
Add in the chopped tomatoes, pepper, basil, parsley, thyme, stock cubes, and salt. Stir and cook for 5 minutes.
Add the chicken broth, stir then add the chicken breasts back into the skillet. Cook on low heat for 10 minutes then take off heat.Serve and enjoy.

Tips
To test if the chicken is cooked to a standard that is safe to eat, insert an instant read thermometer into the thickest part to check the temperature. The temperature should at least be 165F / 75C to be considered safe to consume.
Subtitute chicken broth for coconut milk if you'd like a creamy coconut flavor.
Season chicken with salt and chicken seasoning or any other seasoning of your choice.
You can cut the chicken breasts into smaller pieces after pan-frying.
If serving with pasta, top with cheese like mozzarella, or parmesan for a cheesy flavor.
