Chicken Breast in Tomato Sauce Recipe

This chicken breast in tomato sauce recipe is simple, easy, and quick. Pan-fried chicken is simmered in tomato, herbs and spices to give flavorful, aromatic, and delicious chicken tomato sauce that can be served on pasta, noodles, rice, or potatoes.

Ingredients
  

  • 3 pieces Chicken breasts
  • 3 tablespoons Olive oil
  • 1 medium Onion chopped
  • 4 cloves Garlic minced
  • 1 can Chopped tomatoes
  • ½ teaspoon Parsley
  • ¼ teaspoon Basil
  • ½ teaspoon Dried thyme
  • Salt to taste
  • 1 cup Chicken broth or wine

Instructions
 

  • Prep the chicken by patting them dry and seasoning with salt, pepper, and any other seasoning you wish to add. 
  • Add oil to a frying pan or skillet over medium heat then add the seasoned chicken breasts.
    Leave to brown and cook for 7- 8 minutes then flip them over to brown and cook the other side for another 7-8 minutes.
    Remove the chicken from the skillet onto a plate and set aside.
  • Add chopped onions and garlic in the skillet, then saute for a minute or two till translucent and fragrant.
  • Add in the chopped tomatoes, pepper, basil, parsley, thyme, stock cubes, and salt. Stir and cook for 5 minutes.
  • Add the chicken broth, stir then add the chicken breasts back into the skillet. Cook on low heat for 10 minutes then take off heat.
    Serve and enjoy.

Notes

Tips
  • To test if the chicken is cooked to a standard that is safe to eat, insert an instant read thermometer into the thickest part to check the temperature. The temperature should at least be 165F / 75C to be considered safe to consume.
  • Subtitute chicken broth for coconut milk if you'd like a creamy coconut flavor.
  • Season chicken with salt and chicken seasoning or any other seasoning of your choice. 
  • You can cut the chicken breasts into smaller pieces after pan-frying. 
  • If serving with pasta, top with cheese like mozzarella, or parmesan for a cheesy flavor.
