Easy air fryer chicken and vegetables recipe that is simple and fast. This healthy air fryer roasted vegetables and chicken is marinated in seasoning and air fried to perfection. It is quick and is ready in under 30 minutes.
500g (1lb)Chickenbreast or boneless chicken thighs
1small headBroccoli
1smallRed bell pepper
1smallYellow bell pepper
1smallRed Onion
1tablespoonPaprika
1tablespoonParsley
1teaspoonBlack pepper
Saltto taste
1tablespoonOlive oil
½teaspoonGarlic granules
Instructions
Pat the chicken dry with a paper towel then cut into bite size that is about an inch.Season the chicken with salt, half the pepper, olive oil, parsley, paprika, garlic and any other seasoning of your choice. Mix and set aside.
Wash the vegetables and cut them into similar bite size. Add the remaining black pepper, parsley, paprika, garlic, salt, olive oil and any other seasoning to it. Mix to combine with the veggies.
Add the chicken and vegetables in the air fryer basket in a single layer. Set the air fryer to a temperature of 175C/350F.Air fry the vegetables and chicken for 15 minutes or till cooked.
Bring out of the air fryer, serve and enjoy.
Notes
Tips
Cut chicken into bite size so it cooks at the same time as the vegetables. If using bigger portions, cook the chicken in the air fryer for 5 minutes before adding vegetables to it.
If using any other vegetable not listed in the recipe, ensure it has a similar cooking time with the one listed so they cook evenly.
Season to your taste and liking. You can use any seasoning of your choice.
Arrange the chicken and veggies on a single layer in the air fryer basket.
Note that cooking time varies with the brand of air fryer so you might have to adjust the temperature and cooking time.
